Instructions

  • Rinse the dried lentils thoroughly under cold water.
  • In a medium saucepan, combine the rinsed lentils and chicken broth.
  • Bring to a boil, then reduce heat to low, cover, and simmer for about 25-30 minutes, or until lentils are tender.
  • While the lentils are cooking, gently poach the cod fillets in a separate small saucepan with a little water (just enough to cover) for about 8-10 minutes, or until cooked through and flakes easily.
  • Drain the cod and flake it into small pieces with a fork.
  • Once the lentils are tender, drain any excess liquid.
  • In a large bowl, combine the cooked lentils, flaked cod, mashed sweet potato, cooked rolled oats, olive oil, salmon oil, and parsley.
  • Stir everything together until well combined.
  • If using, add a pinch of turmeric and mix again.
  • Let the food cool to room temperature before serving.
